TOTAL COMPENSATION: $44,009.16 - $59,384.21 annually . Total compensation is an estimate based upon base compensation, median retirement fund contributions, and current employer-paid health and related benefit contribution rates (including medical, dental, life insurance, long term disability, and leave). The actual total will vary depending upon each employee's enrollment choices.
THIS IS A CONTINUOUS RECRUITMENT AND WILL BE USED TO GENERATE AN OPEN LIST OF APPLICANTS TO FILL VACANCIES AS THEY OCCUR.
This is work involving the preparation of all food and supervision of inmates on a shift in the kitchen at either of the County's Correctional Facilities.
EXAMPLES OF DUTIES:
Supervises inmates and participates in cooking, baking, and other food preparation as a cook on shift; adjusts preset menu as necessary.
Participates and performs preliminary preparation necessary for the next day's meals; assures that food is of good quality and is served on time.
Bakes pies, cakes, cookies and biscuits and prepares other desserts.
Assists in preparing menus and determining amount of food to meet menu requirements; adjusts recipes for fluctuation in inmate population.
Inspects food being prepared to insure proper quantity, quality, and handling; instructs and trains employees and inmate kitchen help in sanitation, cooking, preparing, and handling food. Controls waste and theft of food by inmates.
Operates mixers, ovens, steamers, grills, food processors, steam kettles, and other food equipment.
Receives food and non-food related orders and is responsible for the proper rotation of product.
Directly supervises inmate workers in the cleaning of trays and utensils, cookware, kitchen and food storage areas.
Maintains facility security in the kitchen operations and accounts for the inventory of all kitchen utensils and equipment.
Supervises up to 20 inmate workers assigned to kitchen duties.
Participates in institutional program of inmate worker job training; confers with supervisor regarding behavioral problems and progress of inmates under his supervision.
Requires lifting of heavy cooking equipment, cases of food and staples in containers weighing up to 75 pounds.
Transports food and supplies from one facility to another facility operating a County vehicle.
Performs other related duties as required.
TRAINING AND EXPERIENCE: High School diploma or equivalent - and- two (2) years of experience in institutional or large volume cooking. (Experience as a "fry cook" in "fast food" establishments is not qualifying. Line cooks from full service restaurants will be considered). Completion of a course in large scale cooking in military service, vocational school, hotels, or another institution may be substituted for one (1) year of experience.
LICENSES: Must have a current Washington State Food Handler's Permit. Must possess a valid, lawful driver's license and have no more than four (4) moving violations in the three (3) years preceding the application.
PLEASE NOTE: Background inquires shall be completed prior to appointment. The background investigation will include a polygraph examination, a psychological evaluation and a medical evaluation.
Minimum age is 21. Good physical condition; vision with correction 20/20 and normal color vision; normal hearing. U.S. citizen, able to read and write the English language.
Knowledge of: * food management including the planning of menus in accordance with generally accepted standards, and the preparation and serving of large-scale food service for 900 or more inmates. * food values and nutrition, personal hygiene, food handling, sanitation and safety precautions. * care and use of kitchen utensils and equipment. * adjusting ingredients in large-scale recipes to meet changing needs.
Ability to: * perform the aforementioned examples of duties. * supervise the kitchen and maintain sanitation, care of equipment and the safety of personnel. * communicate effectively and tactfully, both orally and in writing. * establish and maintain control of 8 - 20 inmate workers according to established Detention policies and procedures. * instruct and train new employees and/or inmates in sanitation, cooking, preparing and handling food. * Establish work methods and supervise and instruct others in cooking and kitchen duties. * establish and maintain cooperative working relationships with inmates, Detention staff and the general public. * provide constructive atmosphere for inmate corrections.
Skilled in: * preparation and cooking of starches, vegetables, meats, fish and poultry, baking pies, cakes, cookies and other desserts. * keeping accurate records of food use and maintaining inventory control including proper rotation of supplies. * the operations of all food equipment.
